Chicken and Scallion Oil

1Add chicken skins and a splash of water to a cold pan.chicken skins: from 1 whole chicken, splash of water

2Set the heat to medium-low and slowly render the fat.

3This will take at least 30 to 45 minutes.

4The skins should become golden brown and completely crisp.

5Be careful not to burn.

6Once the fat is rendered, remove the chicken pieces.

7Toss in garlic cloves and white ends of green onions .garlic cloves: 2, white ends of green onions: 5

8Cook for about ⏱️ 10 minutes until fragrant.

9Strain the oil into a container.

10Store in the fridge or freezer until ready to use.
